This deliciously decadent wine is produced from a small parcel of Viognier grown on our hillside vineyard, from fruit harvested at exceptionally high levels of ripeness (23oBe).
Production of this 'Noble' desert wine is dependent on specific weather conditions that promote the growth of botrytis mould. This mould is responsible for the distinct apricot kernel and honey notes, as well as the viscous texture of the wine. In 2015 the stars aligned - with a long, warm and dry ripening period allowing the grapes to develop a high level of sugar and wonderful flavour concentration.
The 2015 Coombe Farm Noble Viognier displays varietal aromas of honeysuckle and citrus, supported by lucious honey and apricot notes from the Botrytis. With almost 200 grams per litre of sugar, the wine is decadently rich but well balanced, with a fresh, clean acidity.
